Lenses will set you back more - get one prime lens for portraits (nifty fifty probably) and one wide angle lens (I have a sigma 10-20mm).
All up this costed me $300 for glass and I get my body free. But you could get a cheaper wide angle, mine was $200 used, and I bought the 50mm new too.

I use a combo of a Canon 1200d, Samsung Galaxy Camera 2 and my good old LG V20 mobile. With the right tripod, lighting and patience, it is amazing what shots you can get with, say, a phone. Also, finding a decent image editor can really make that image pop! Alot of my newer stuff on insta is done with just my phone.
