Not in my experience - less than half have latch-depressed alarms, and those are typically programmed to go off after a certain period (such as 5 or 10 minutes) of the door being open. if by fire exit you mean doors into the stairwell. Some buildings have cameras facing the doors, so you gotta get in quick. Some have magnetic sensors. So if you don't want to risk getting done for picking the lock which is basically trespassing, its pretty hard to find many good roofs.
